Consumers are craving higher protein diets to complement their on-the-go lifestyles; with eggs being their most preferred source for protein, consumers are seeking out more great tasting, portable, and convenient egg options to accommodate their busy routines. With egg bites anticipated to grow 110% on U.S. restaurant menus through 2028, manufacturers recognize the opportunity to feed consumer demand but that would require filling a gap in their own product development first.
A premier food manufacturer came to us with an opportunity to optimize their egg bite formula. They already had a line of egg bites, but knew they would have to reformulate to successfully increase the protein content of their egg bites without increasing the fat, sacrificing the texture, or altering the flavor profile. Oh, and it needed to be clean-label, too.
We introduced our customer to our liquid protein base – an all-dairy, clean-label functional ingredient that is neutral in flavor and applicable across different product categories. Not only does this innovation boost protein while reducing fat, but it also provides enhanced fortification, texture, mouthfeel, body and stability. On top of that, our liquid protein base was designed with manufacturing efficiency in mind. It’s heat, acid and freeze-thaw stable and able to withstand the toughest conditions through processing while optimizing throughput.
By incorporating our liquid protein base into their egg bite formula, our customer was able to add a high-protein label claim and enhance the nutritional profile of their existing product line. These improvements led to their egg bites flying off the shelves from frozen food aisles at grocery stores nationwide and our customer becoming a category leader.
Adding liquid protein base increased protein by 21.4% and reduced total fat by 8%.
Demand for high-protein breakfasts has grown 400% since 2010 indicating a long-term consistent growth trend for protein intake.
In collaboration with our expansive manufacturing network, we were able to produce our liquid protein base in bulk with our customer’s preferred packaging.
